Buko and Pandan are Filipino words. Translated, Buko is coconut and Pandan is screwpine. Both of these are native products from the Philippines. Since the people in the Philippines are resourceful and naturally experimental with their foods, we see many recipes which are not duplicated in other areas.
They have conjured up a special cookie that is both delicious and exotic at the same time. Buko Pandan cookies are not just ordinary cookies. I only recently got wind of these delectable cookies. I am an avid baker myself, which is why, when I saw the recipe for screwpine coconut cookies I didn’t think twice before trying out the recipe.

- 11/2 cup butter21/2 cup granulated sugar (regular sugar)31/2 cup firmly packed light brown sugar41 large EGG51/2 teaspoon Pandan or screwpine flavoring paste63/4 cup WHOLE WHEAT flour71/2 teaspoon salt81/2 teaspoon baking powder91/2 teaspoon baking soda10
Steps on how to Bake:
- 1Preheat your oven to 350 degrees Fahrenheit.2Lightly grease your baking sheets or put parchment paper on top so the cookies will not stick.3Combine the butter, granulated sugar and brown sugar in the large mixing bowl.Beat it on medium speed using your electric mixer until all ingredients are combined completely, or use your wooden spoon for mixing. Once the mixture is smooth and creamy beat in 1 large egg and the Pandan flavoring paste (may be clear or green in color). Once combined, set it aside.4Sift the flour, baking powder, baking soda and salt in a small mixing bowl.5Spoon the Buko Pandan cookie dough in large tablespoons full, and place them on the baking sheet at about 2 inches apart.(Dough will expand when heated.) Bake the cookies until they are lightly brown at the edges, approximately 8-10 minutes.6Once done with baking.Let the cookies cool for about two minutes before transferring to the wire rack and after 10 minutes. Serve them to your family or guest for a taste test.
